Chocolate Filled Strawberries

This is one of my favorites, who doesn't love fruit & chocolate??

Ingredients:
15-20 strawberries
1 bag milk chocolate chips

Directions:

  1. Cut the stems off of cleaned strawberries and carefully scoop out the top of the berry
  2. Pour bag of chocolate chips in a glass bowl and heat in the microwave for 30 second intervals. Make sure to take out the bowl and stir every 30 seconds. Continue until all the chips are melted.
  3. Use a baby spoon or piping bag to spoon chocolate into the berries
  4. Place in fridge for 10 minutes.
I found that using an egg carton to stand the strawberries in while the chocolate hardened work perfectly!

Cereal Plus

This one is for the kids. With school coming up there might not be a whole lot of time to make breakfast. This is a yummy and healthy way to get your kids to enjoy their breakfast!! To make it mom-friendly, keep dried fruit, different varieties of nuts, seeds and dark chocolate chips in individual storage containers that are quick from pantry to table.


Serves 4


Ingredients:

3 to 4 cups whole grain cereal
Fresh fruit: banana slices, berries and diced apples
Nuts and seeds of your choice
Dark chocolate chips or chopped dark chocolate bar
Milk (regular or dairy-free)

Directions:

  1. Make sure your kids have cereal and milk pouring skills then let them pick and choose their favorite additions.

Spinach Chips

Ingredients:
1 bag of spinach
1 tbsp extra virgin olive oil
curry powder
salt
pepper
thyme

Directions:

  1. Rinse and dry the spinach
  2. Place in a bowl and add remaining ingredients
  3. Toss until spinach is covered
  4. Line a baking sheet with parchment paper
  5. Bake 15-20 minutes at 250 degrees

Waffle Sandwhiches

Keep your kids interested in fixing their own breakfasts by making the usual breakfast dishes new and different. Instead of plain old waffles with syrup, use waffles in place of toast or bread. Challenge your kids to come up with waffle sandwich recipes using fun ingredients, such as: thinly sliced deli meats and cheese, fruit, or egg salad.


Serves 2

All you need.....

4 whole grain toaster waffles
your children's choice of filling

  1. Make sure your kids know how to safely use the toaster. (If their too young you can do it for them)
  2. Teach them how to toast the waffles and let them make their own sandwiches.

Chewy Chocolate Cookies

This recipe was sent to me by my wonderful sister Amber. Now i'm going to share it with you! Enjoy!!

Ingredients:
1 avocado (pitted and skinless)
1/2 cup chocolate protein powder
2 tbsp cocoa powder
4 squares of dark chocolate (chopped)

Directions:

  1. Mix all of the ingredients in a large bowl using a hand mixer or food processor until it gets doughy
  2. Split the dough and roll into four balls
  3. Bake 10-11 minutes at 350 degrees
  4. Watch them towards the end so they don't burn. They should be CHEWY like a brownie.

Pineapple Chicken Salad

Ingredients:
1 chicken breast
1 tsp olive oil
1 cup fresh crushed pineapple
1 tsp garlic powder
1 tbsp parmesan
salt
pepper
1 tbsp light brown sugar
1/4 cup blueberries and pineapple
1/4 cup diced red onion
1/4 cup diced bell peppers
3 cups romaine lettuce

Directions:

  1. Defrost the chicken and cut into strips.
  2. Add it to the pan with olive oil on medium high.
  3. Add crushed pineapple, brown sugar, garlic powder, salt and pepper and cook until chicken is glazed and cooked through all the way.
  4. Save remaining glaze in the pan.
  5. Place the chicken in the fridge for 30 minutes to chill.
  6. In a bowl add lettuce, peppers, onion, diced pineapple, and blueberries.
  7. Take chicken out of the fridge and lay on top of the salad.
  8. Pour glaze over the salad and add parmesan on top.

Healthy on the road snacks

  17. hard boiled eggs
  18. yogurt cup with fruits & nuts

Parmesan Chicken Bake

Just made this for the first time today and I loved it! So did my 4 year which is great because we all know little ones are picky eaters!



Ingredients:
6 chicken breasts ( skinless & boneless)
1 cup light mayonnaise or you can substitute with plain Greek yogurt
1/2 cup fresh Parmesan cheese
1 1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder

Directions:
1. Preheat oven to 375 and spray the inside of a 9x13 glass baking dish. Lay chicken inside the pan.
2. Mix together the remaining ingredients and spread evenly over each piece of chicken, being sure to cover all the exposed raw meat (so it doesn't dry out).
3. Sprinkle on a bit more fresh Parmesan over all the chicken.
4. Bake for 45 minutes.
This dish is even better the next day!!

Yogurt Dots

I love making fun things my daughter will enjoy eating. I seen these yogurt dots on Pinterest and thought id give it a go. They are so good and super easy to make!!


All you need.....
1 plastic lunch baggy ( i used the little glad sandwich bags )
yogurt of choice ( i used yoplait light key lime pie)
1 pan

Open up the sandwich bag and pour your yogurt into the bag. Cut a little tip off the corner of the bag (using it like a piping bag). Make small little bite size circles. Place in freezer until frozen, then ENJOY! 

Cheesecake


Filling:
3- 8oz cream cheese softened
1 cup sour cream
2 tsp vanilla extract
3 eggs
1 cup sugar

Crust:
1 3/4 cup graham cracker crumbs
1/4 cup sugar
1/3 cup soft butter

Directions:
1. Beat cream cheese until real fluffy, add sugar and vanilla, beat again. 
2. Add eggs (one at a time) while beating.
3. Add sour cream and beat again.

For the crust:
In a big bowl combine the graham cracker crumbs, sugar, and soft butter. Blend together with the bottom of a fork. When done, line the pie pan with the crust. Then add the cream cheese filling.

Bake at 350 degrees for one hour and ten minutes. Turn of the oven and open the door. Leave it sit on the rack in the oven for an additional hour. Chill for 4 hour, then ENJOY!!
